Most US grown elderberry is farmed & cultivated for agricultural efficiency, selected for uniformity, yield, and ease of harvest. It’s human-handled at every step; a *very* different from the standards we continue to raise.

We source exclusively from wild-growing European Sambucus nigra naturally found in the Dnipro and Dniester valleys of Ukraine, regions where elderberry has grown for centuries in biodiverse forests, riverbanks, and natural preserves.

These elderberries are not planted, artificially irrigated, nor fertilized. They are not hybridized for commercial production.

Instead, the plants develop within a natural ecosystem shaped by fertile soils, seasonal climate variation, and ecological diversity.

We believe in quality over locality.

Just as great wine reflects the vineyard and exceptional olive oil reflects the grove, elderberries are shaped by the environments in which they grow. The result is flowers with exquisite aromas and fruit with remarkable color, concentrated character, and exceptional botanical depth.

Earned Its Place Across Europe

Long before elderberry became a modern ingredient, European Sambucus nigra had already earned its place in kitchens, cellars, and pantries across Europe.

Gathered for Generations

For generations, it was gathered and transformed into wines, cordials, preserves, syrups, and seasonal preparations that celebrated the fruit itself.

Families returned to it year after year to bring families together around the table.

Its deep violet color, bright acidity and layered, concentrated berry richness.

Developed a Dependable Reputation

Over time, Sambucus nigra developed something far more valuable than popularity, it developed a dependable reputation built through centuries of culinary use and passed from one generation to the next.

Long before laboratories existed, people were already deciding which fruits were worth gathering, preserving, and returning to year after year. That history is not the reason we source it. But it is part of the reason we trust it.

Processing to Preserve

Extraordinary fruit is only the beginning.

What happens after harvest determines how much of that character ultimately reaches the bottle.
Every step of our process is designed with a single objective: preserve the qualities that made the fruit exceptional in the first place.

Preserving Purity

Every batch begins with municipally treated water that already meets rigorous drinking water standards and is further refined through multi-stage filtration and independent verification.

Our filtration system is designed to reduce chlorine, sediment, and a range of unwanted impurities, including heavy metals, helping ensure a clean foundation for every batch. The result is water that allows the character of the fruit to remain the focus without sacrificing safety.

Preserving Consistency

Our products are crafted in a dedicated free-of-gluten commercial kitchen using professional food manufacturing equipment and standardized processes developed for consistency and safety.

We maintain FDA registration, undergo state & federal regulatory inspections, verify pH levels, and operate under approved process authority documentation developed in partnership with leading food process authorities.

Preserving Fruit Character

Our extraction methodology is designed to respect the fruit.

A carefully controlled low and slow heat process helps draw out the goodness of the berry while preserving the qualities that make elderberry unique.

The resulting extract is then passed through multiple stages of fine filtration to remove seeds, sediment, and fully extracted fruit material, creating a smoother, more refined finished product.

Preserving More of the Berry

Most elderberry extraction systems separate the liquid and leave the remaining fruit behind. After extraction and straining, the remaining fruit is gently pressed using hydraulic pressure to recover liquid, color compounds, and anthocyanins still held within the berry.

This allows us to capture more of what the fruit naturally offers while reducing unnecessary waste.

Preserving Without Preservatives
The finished product is carefully bottled, heat sealed, and verified for stability through disciplined process control rather than reliance on chemical preservatives.
The result is a shelf-stable product that maintains its quality while remaining true to our food-first philosophy.

Proof With Purpose

With no shortage of marketing claims for ‘best quality,’ we believe quality should be demonstrated. That is why we, along side our suppliers, invest in independent laboratory testing, certification, traceability, and verification.

Over multiple harvest years, we have tested the elderberries we source to better understand how growing conditions, drying practices, storage, and handling influence the finished fruit because quality should never depend on assumptions but always supported by evidence.

Quality Verified Over Time

2021

Independent anthocyanin analysis established an early benchmark for pigment concentration and fruit quality.

2023

Independent laboratory testing evaluated both anthocyanin concentration and moisture levels, helping verify that careful drying practices were preserving key characteristics of the fruit.

2026

Comparative testing demonstrated substantial differences in anthocyanin concentration and moisture retention between the European elderberries we source and the American elderberries evaluated for comparison.

Anthocyanins are the naturally occurring pigments responsible for elderberry’s deep garnet color and rich violet hue. Moisture matters as well. Aggressive drying can diminish qualities naturally present in elderberries. Fruit that retains appropriate moisture often preserves more of its original character.

For us, these results are not simply laboratory measurements. They are evidence that sourcing, harvest timing, drying methods, and post-harvest handling matter.
